Indian-Spiced Braised Chicken
- 5 whole Boneless, Skinless Chicken Thighs
- 2 whole Boneless, Skinless Chicken Breast Halves
- 1 whole White Onion, Chopped
- 3 cloves Garlic, Minced
- 1 Tablespoon Freshly Minced Ginger
- 2 cans (14.5 Oz. Can) Diced Tomatoes
- 1 Tablespoon Tomato Paste
- 1 teaspoon Cayenne Pepper
- 1 Tablespoon Ground Coriander
- 1 Tablespoon Coarse Salt
- 1 Tablespoon Freshly Ground Pepper
- 1/2 cups Plain Greek Yogurt
- 1 cup Freshly Chopped Cilantro
- 2 Tablespoons Garam Masala
- 2 cups Cooked Jasmine Or Basmati Rice
- In a slow cooker, add the chicken, onion, garlic, ginger, tomatoes, tomato paste, cayenne, coriander, salt and pepper.
- Stir to combine.
- Cook on high for 4 hours, or low for 8 hours.
- Add in the yogurt, cilantro and garam masala.
- Stir to combine, let cook 5 more minutes.
- Serve over a bed of jasmine or basmati rice.
