Madelines

  1. Cream butter and sugar until light and fluffy.
  2. Add eggs one at a time, beating well after each additiong.
  3. Stir in vanilla.
  4. Sift flour and baking powder.
  5. Fold into creamed mixture.
  6. Add milk to give a soft dropping consistency.
  7. Half fill 12 small grease moulds with mixture.
  8. Bake at 200C (400F) for 8 minutes or until cakes spring back lightly when touched.
  9. Leave in tin for 5 minutes before turning out onto a cooling rack.
  10. (If they last that long).
  11. Eat on it's own, or with jam and/or cream.
