Nutty Yam Bread
- 14 cup canola oil (or vegetable oil)
- 14 cup butter, softened
- 1 cup yam, canned drained and mashed
- 2 eggs
- 1 teaspoon vanilla extract
- 1 tablespoon rum
- 12 cup white sugar
- 12 cup brown sugar, lightly packed
- 1 13 cups flour
- 34 teaspoon salt
- 12 teaspoon baking soda
- 12 teaspoon baking powder
- 1 teaspoon allspice
- 12 cup nuts, chopped (we use walnuts or pecans)
- Preheat oven to 350 degrees.
- Grease or spray large loaf pan
- In medium bowl, mix oil, butter, eggs, sugars, vanilla, rum, yams, allspice and set aside.
- In medium bowl, mix flour, salt, baking soda, and baking powder
- Gradually add flour mixture to wet ingredients and stir until barely mixed (do not keep stirring).
- Fold in nuts.
- Pour mixture into greased loaf pan.
- Bake 45-50 minutes or insert toothpick and if it comes out clean and no batter residue it's done.
- Let rest 10-15 minutes before serving warm or let completely cool before serving.
