Ridiculously Simple Oyako-don: Chicken and Egg Rice Bowl

  1. Cut the chicken into bite-sized pieces and slice the onion thinly.
  2. Combine the dashi stock, soy sauce, sugar, mirin and sake and bring to a boil.
  3. Add the onion and chicken and simmer.
  4. When the onion is transparent and the chicken is cooked through it's good to go.
  5. Swirl in the beaten egg, put a lid on and cook until the egg looks good (soft set is the best).
  6. Turn the heat off.
  7. Pour this over rice in a bowl, garnish with chopped green onion - and the Ridiculously Simple Oyako Don is done!
