Ridiculously Simple Oyako-don: Chicken and Egg Rice Bowl
- 2 Eggs
- 80 grams Chicken
- 1/2 small Onion
- 60 ml Dashi stock
- 2 tbsp Soy sauce
- 1 tbsp Sugar
- 1 tbsp Mirin
- 1 tsp Sake
- Cut the chicken into bite-sized pieces and slice the onion thinly.
- Combine the dashi stock, soy sauce, sugar, mirin and sake and bring to a boil.
- Add the onion and chicken and simmer.
- When the onion is transparent and the chicken is cooked through it's good to go.
- Swirl in the beaten egg, put a lid on and cook until the egg looks good (soft set is the best).
- Turn the heat off.
- Pour this over rice in a bowl, garnish with chopped green onion - and the Ridiculously Simple Oyako Don is done!
