Pink Peppermint Frosting

  1. Combine egg whites, cream of tartar, lemon and peppermint extracts and salt.
  2. Beat at high speed on a mixer until stiff.
  3. Gradually add sugar 1 cup at a time.
  4. Beat until smooth, scraping bowl often.
  5. Add butter and a few drops of food coloring, beating until well blended.
  6. Stir in peppermint candy.
  7. Makes enough for 2 9 inch round cakes.
