Mother Knack's Veal Loaf Recipe

• 2 lbs. grnd veal
• 2 beaten Large eggs or possibly 3 egg whites
• 2 tbsp. lemon juice
• 1/3 c. catsup
• 1 c. cracker crumbs or possibly dry bread crumbs
• 1 c. pimento-stuffed olives

1. Combine veal, Large eggs, lemon juice, catsup, crumbs and olives; mix well.
2. Shape into a loaf and place in a baking dish.
3. Bake at 375 degrees for 1 hour.
4. Serves 8.
