Apple Dollar Pancakes Recipe
- 3 x Large eggs separated
- 3 Tbsp. lowfat sour cream
- 1 x apple peeled, cored, and minced
- 3 Tbsp. flour
- 1 tsp baking pwdr
- 1/2 tsp grnd cinnamon
- 3/4 c. maple syrup
- Combine egg yolks, lowfat sour cream, apple, flour, baking pwdr and cinnamon; stir well.
- Beat egg whites with an electric mixer till peaks form; fold into yolk mix.
- Drop batter by 1/4 c. onto a warm, lightly greased griddle.
- Cook till golden, turning once.
- Serve with maple syrup.
- This recipe yields 4 servings.
- Comments: A bit of lowfat sour cream in the batter makes these pancakes a bit less sweet than most, that might make them a hit at your house.
- Try them with powdered sugar, sliced bananas or possibly your favorite jam in place of the maple syrup.
