Peppermint Candy Chocolate Whoopie Pies

  1. Heat oven to 350 degrees F.
  2. Beat first 4 ingredients with mixer until well blended.
  3. Drop 2 Tbsp.
  4. batter, 2 inches apart, into 32 mounds on baking sheets.
  5. Bake 10 min.
  6. or until toothpick inserted in centers comes out almost clean.
  7. Cool on baking sheets 3 min.
  8. Remove to wire racks; cool completely.
  9. Beat cream cheese and marshmallow creme in large bowl with mixer until well blended.
  10. Add COOL WHIP, half the crushed candy and food coloring; beat on low speed just until blended.
  11. Place bottom sides of 2 cookies together for each whoopie pie, spreading about 2 Tbsp.
  12. COOL WHIP mixture between cookies.
  13. Roll edges in remaining crushed candy.
