Lettuce Soup

  1. Saute onion in butter until gently golden.
  2. Stir in flour, salt, nutmeg and pepper.
  3. Dissolve bouillon cubes in boiling water; add to onion mixture slowly.
  4. Cook over medium heat.
  5. Stir until thickened.
  6. Add lettuce.
  7. Cover and let cook 3 minutes.
  8. Mix together egg yolk and cream.
  9. Stir 1/4 cup soup into yolk-cream mixture.
  10. Pour mixture into soup, stirring constantly.
  11. Cook over low heat, stirring, until soup comes to a boil.
  12. Remove from heat.
  13. Serve at once.
