Cheesy Squash-Stuffed Chicken
- 2 Tbsp. butter or margarine
- 2 yellow squash, shredded (about 2 cups)
- 1 onion, chopped
- 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
- 1 cup KRAFT Shredded Sharp Cheddar Cheese
- 2 broiler-fryer chickens (5 lb.), quartered
- 3/4 cup KRAFT Sweet & Spicy Barbecue Sauce
- Heat oven to 400 degrees F.
- Melt butter in medium saucepan on medium heat.
- Add squash and onions; cook and stir 2 min.
- or until tender.
- Remove from heat.
- Stir in stuffing mix and cheese.
- Insert fingers carefully between the meat and skin of each chicken quarter to make pocket; fill with stuffing mixture.
- Place, skin sides up, in large roasting pan.
- Bake 50 to 55 min.
- or until chicken is done (165 degrees F), brushing with barbecue sauce for the last 10 min.
