Cheesy Squash-Stuffed Chicken

  1. Heat oven to 400 degrees F.
  2. Melt butter in medium saucepan on medium heat.
  3. Add squash and onions; cook and stir 2 min.
  4. or until tender.
  5. Remove from heat.
  6. Stir in stuffing mix and cheese.
  7. Insert fingers carefully between the meat and skin of each chicken quarter to make pocket; fill with stuffing mixture.
  8. Place, skin sides up, in large roasting pan.
  9. Bake 50 to 55 min.
  10. or until chicken is done (165 degrees F), brushing with barbecue sauce for the last 10 min.
