Chicken in Avocado and Bacon Sauce
- 6 pieces chicken cooked
- 2 each avocados peeled and sliced
- 1/2 cup chicken broth
- 1/2 cup cream thick
- 2 ounces butter
- 1 each onions small
- 2 teaspoons ginger grated, fresh
- 1/2 pound bacon
- 1 x salt
- 1 x black pepper freshly ground
- Set oven at 400F (200C).
- Peel and slice the onions very finely and saute with the spices in the butter until transparent.
- Leave to one side.
- Meanwhile, liquidize the avocados, stock and cream in a blender.
- Mix in the onions and pour the mixture over the chicken in an ovenproof dish.
- Sprinkle over the bacon and heat through for 20 minutes.
