Chicken in Avocado and Bacon Sauce

  1. Set oven at 400F (200C).
  2. Peel and slice the onions very finely and saute with the spices in the butter until transparent.
  3. Leave to one side.
  4. Meanwhile, liquidize the avocados, stock and cream in a blender.
  5. Mix in the onions and pour the mixture over the chicken in an ovenproof dish.
  6. Sprinkle over the bacon and heat through for 20 minutes.
