Fluffy Egg Muffins

  1. Cook bacon however you wish.
  2. I prefer baking as it creates less mess and doesn't require attention.
  3. Chop onions and jalapenos.
  4. Add to pan with vegetable oil, salt, and black pepper.
  5. Put pan on medium heat and mix regularly.
  6. Cook until the onions are browned.
  7. Take your time on this step, hurrying with high heat will not produce the same results.
  8. Break eggs into large bowl and beat together with Greek yogurt.
  9. Once fully blended, add the cooked fillings, ground mustard, cayenne pepper, basil, baking powder, and baking soda.
  10. Stir until blended.
  11. Spray muffin tin with cooking spray.
  12. Evenly distribute mixture between tins.
  13. Bake at 400F Fahrenheit for 15 minutes.
  14. Mixture should puff up and brown on the top.
  15. For optional toppings, top with cheese and bake for 2 to 5 additional minutes.
  16. Add hot sauce while serving.
