Lowfat Pasta Alfredo
- 8 ounces linguine
- 1 yellow sweet pepper
- 4 cups broccoli florets
- 2 large tomatoes
- 12 teaspoon olive oil
- 12 cup plain fat-free yogurt
- 12 cup fat-free ricotta cheese
- 12 cup grated parmesan cheese
- 12 teaspoon white pepper
- Wash vegetables.
- Cut yellow pepper into strips, tomatoes into 8 wedges each, and separate broccoli florets into bite-size pieces.
- Saute in olive oil until tender, but still crisp.
- Cook pasta according to package directions for al dente; drain and keep hot.
- Stir yogurt, cheeses, and white pepper into vegetables.
- Toss with hot pasta.
- Serve immediately.
