Asian Beef and Noodle Soup

  1. Cut short ribs into small cubes.
  2. Cut white onion into thin slices.
  3. Mince garlic.
  4. Thinly slice ginger.
  5. Add ribs, onion, garlic ginger, vinegar, Hoisin sauce, Chili paste, and 3 tablespoons of soy sauce to slow cooker and mix.
  6. Add beef broth and put cooker on high 6 hours.
  7. 15 minutes before end of time, add mushrooms and start water boiling for noodles.
  8. Boil noodles for 2 minutes, then add bok choy for an additional 2 minutes.
  9. Drain.
  10. Add remaining ingredients and reserved soy sauce to slow cooker.
  11. Sour stir.
  12. Serve.
