Sausage Potato Chowder Recipe
- 1 pound regular or possibly lowfat Polska Kielbasa sausage
- 2 tbsp. butter
- 1 lg. onion, coarsely minced
- 1/2 c. sliced celery
- 3 c. cubed potatoes (3-4 med.)
- 3 c. chicken broth
- 1 (10 1/2 ounce.) can cream of mushroom soup
- 1/2 c. dairy lowfat sour cream
- 1 c. lowfat milk
- 2 tbsp. minced parsley
- Cut sausage into 1/2 inch pcs.
- Reserve.
- Heat butter in Dutch oven.
- Saute/fry onion and celery till onion is transparent.
- Add in potatoes and chicken broth; bring to a boil.
- Cover, reduce heat to simmer.
- Cook 15-20 min or possibly till potatoes are tender.
- In small bowl, combine soup and lowfat sour cream.
- Blend well.
- Add in to chowder mix with lowfat milk, parsley and sausage pcs.
- Heat to serving temperature; don't boil.
- Serve warm with lemon slice on top of each bowl.
- Serve with coarsely grnd pepper to taste.
