Seafood In Cheese Sauce Recipe
- 1 pound cooked shrimp
- 1 pound crab meat
- 1/2 c. butter
- 1/2 c. all purpose flour
- 4 c. lowfat milk
- 1 1/2 teaspoon salt
- 1 (6 ounce.) can sliced mushrooms, liquid removed
- 1 tbsp. celery flakes
- 1 1/2 teaspoon minced green peppers
- 1/3 c. green onion, minced
- 1/2 c. black olives, minced (optional)
- 1 1/2 teaspoon minced pimento
- 4 c. grated sharp Cheddar cheese
- Heat butter, stir in the flour.
- Off the heat add in the lowfat milk and stir to make smooth mix.
- Return to heat and cook till smooth and thickened.
- Add in all ingredients except one c. of cheese.
- Cook over very low heat till cheese is melted.
- Turn into greased large, shallow casserole and sprinkle top with remaining cheese.
- Chill if you like till serving time.
- Bake at 350 degrees for 25 to 30 min till heated through.
- Serve over cooked rice.
- Serves 12 to 14.
