Spinach Soup
- 6 cup spinach
- 1 can parsnip greens
- 1 can fire roasted tomatoes
- 1/2 red bell pepper, chopped
- 1 can white baby potatoes
- 1 cup lentils, cooked
- 1 cup tofu, cubed
- 1 onion, chopped
- 6 tbsp garlic, minced
- 1 lemon, juiced
- 1 pinch salt and pepper to taste
- Place all ingredients listed to cook for 10-15 minutes or until heated through.
- Sprinkle with your choice of topping and Enjoy!
