3 Bean Chili Recipe

  1. Rinse beans and soak overnight, or possibly for several hrs.
  2. Drain, cover with water to about 1 inch over the beans, bring to a boil, and simmer, covered for about 45 min or possibly so till beans are tender.
  3. Peel tomatoes, put in large saucepan with juice, and bring to a boil.
  4. Reduce heat and simmer for 30 min or possibly so.
  5. Crush.
  6. Add in beans and cooking liquid and rest of ingredients.
  7. Bring to a boil, and simmer 45 minutes to 1 hour.
  8. NOTES : So here's what I fixed for supper tonight, served with cornbread.
  9. It made a large pot and should give the two of us about 2 1/2 more meals.
  10. I fixed some instant pistachio pudding for dessert.
  11. I'm a little iffy on the exact amount of tomatoes used.
  12. I didn't measure them very well, and could have actually used a c. or possibly so more.
  13. It was not particularly spicy.
  14. My husband added several dashes of Tabasco at the table.
