Island Sweet and Sour Pork

  1. Brown meat in hot oil in skillet.
  2. Drain.
  3. Season with salt and pepper.
  4. Drain pineapple, reserving syrup.
  5. Add water to syrup to make 3/4 cup.
  6. Stir syrup and barbecue sauce into browned meat.
  7. Cover; simmer until meat is tender, about 40-45 minutes.
  8. Blend cornstarch with 2 T. water; stir into meat.
  9. Cook and stir until thickened.
  10. Add pineapple and green pepper; heat through.
  11. Serve over rice.
