Classic Salisbury Steaks
- 1 pound ground beef, lean lean meat results in a meatier texture
- 13 cup bread crumbs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large eggs
- 1 each onions sliced
- 10 1/2 ounces beef stock one can, prefer veal stock if possible
- 6 ounces mushrooms, canned pieces
- 2 tablespoons water cold
- 2 teaspoons cornstarch
- Mix ground beef, bread crumbs, salt, pepper and egg; shape into 4 oval patties, each about 3/4 inch thick.
- Cook patties in skillet over medium heat, turning occasionally, until brown, about ten minutes; drain off any accumulated fat.
- Add onion, broth and mushrooms.
- Heat to boiling, reduce heat and simmer until beef is done, about 10 minutes.
- Remove patties, keep warm.
- Heat onion mixture to boiling.
- Mix water and cornstarch; stir into onion mixture.
- Boil and stir 1 minute.
- Place one steak on each plate, spoon the onions and mushroom gravy over each steak.
- Serve with mashed potatoes.
- This recipe is very economical and can really stretch your food dollar.
