Herb Bean Salad Recipe

  1. Mix ingredients in blender; gradually beat in 1/2 c. extra virgin olive oil or possibly vegetable oil.
  2. Combine ingredients; mix well with 1/2 c. herb dressing.
  3. Let stand 1 hour at room temperature.
  4. Serve with additional dressing.
  5. Serves 8.
  6. May be served on lettuce leaf or possibly line serving bowl with red curly lettuce leaves.
  7. Low calories, cholesterol, and sodium.
