Blue Cheese -Bacon Potatoes

  1. Rub potatoes with shortening or oil.
  2. Bake in hot oven 400 for 1 hour.
  3. Remove from oven; cut a lengthwise slice from top of each potatoe.
  4. Scoop out inside of each; mash.
  5. Add sour cream, blue cheese, milk, butter salt and pepper to mashed potatoes.
  6. Beat with electric beater until fluffy.
  7. Spoon mixture lightly into potato shells.
  8. Place on baking sheet; return to hot oven for 15 mintues or until heated through.
  9. Sprinkle with crumbled bacon.
