Blue Cheese -Bacon Potatoes
- 4 medium baking potatoes
- 12 cup sour cream
- 14 cup blue cheese, crumbles
- 14 cup milk
- 4 tablespoons butter or 4 tablespoons margarine
- 34 teaspoon salt
- 1 dash pepper
- 4 slices bacon, crisp, cooked, drained and crumbled
- Rub potatoes with shortening or oil.
- Bake in hot oven 400 for 1 hour.
- Remove from oven; cut a lengthwise slice from top of each potatoe.
- Scoop out inside of each; mash.
- Add sour cream, blue cheese, milk, butter salt and pepper to mashed potatoes.
- Beat with electric beater until fluffy.
- Spoon mixture lightly into potato shells.
- Place on baking sheet; return to hot oven for 15 mintues or until heated through.
- Sprinkle with crumbled bacon.
