Crispy Grilled Cheese

  1. Heat a nonstick or iron skillet over medium-low heat.
  2. Spread one side of both pieces of bread with a small amount of softened butter.
  3. Sprinkle a small amount of grated cheese on each slicejust enough to stick to the butter.
  4. Turn one piece over and place a larger amount of cheese on top (this will be the filling).
  5. Place the other piece on top.
  6. Carefully transfer it to the skillet and cook on both sides until the middle filling is melted and gooey (watch to make sure the surface doesnt burn!
  7. It should be nice deep golden brown.)
  8. Slice in half and dig in!
