Chicken Cacciatora

  1. Heat oil in Dutch oven over medium-high heat.
  2. Add chicken pieces and brown on all sides, about 10 minutes.
  3. Drain chicken on paper towels and reserve.
  4. Remove all but 1 tablespoon oil from pan.
  5. Add peppers, mushrooms, and onions.
  6. Saute about 5 minutes on medium heat; add wine and stir for 1 minute.
  7. Stir in broth and tomatoes.
  8. Add oregano and pepper flakes and bring to a boil.
  9. Add chicken and simmer, uncovered, on medium-high heat about 30 minutes until chicken is tender and sauce is slightly thickened.
  10. Add salt and pepper to taste.
  11. Serve hot.
