Peanut Butter Cookies
- 2 lbs butter
- 1 lb 5 oz sugar
- 1 lb 5 oz brown sugar
- 3 lbs 5 oz peanut butter
- 7 eggs
- 3 lbs pastry flour
- 2 12 teaspoons salt
- 2 teaspoons baking soda
- Soften butter to room temperature on counter.
- Not in microwave.
- Scrape bowl often and well.
- Cream butter, sugars, and peanut butter until fluffy with paddle in large mixer.
- No chunks of butter.
- Add Eggs.
- Continue to paddle until smooth and fluffy.
- Combine dry ingredients and mix until moistened throughout.
- Scrape bottom of bowl to ensure well-mixed.
- Portion approximately 4 oz of dough in a ball.
- Place on cookie sheet (non-stick/sprayed) and flatten to about 1/2" thick.
- Bake 14 minutes at 300 degrees.
