Scalloped Potatoes 'N' Franks Recipe
- 8 frankfurters
- 3 tbsp. butter
- 1 1/2 c. minced onions
- 1/4 c. flour
- 1 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon paprika
- 2 c. lowfat milk
- 1 c. (4 ounce.) shredded Swiss cheese
- 2 tbsp. minced parsley
- 5 c. thinly sliced baking potatoes
- Set aside one frankfurter for garnish.
- Cut remainder into thin slices.
- In a 2 qt saucepan heat butter; saute/fry onions till tender.
- Stir in flour, salt, pepper and paprika.
- Remove from heat; stir in lowfat milk gradually.
- Cook over medium heat, stirring constantly, till thickened.
- Cook 2 min more.
- Remove from heat; stir in cheese and parsley till cheese is melted.
- Layer one half of potatoes into a buttered casserole; pour on 1/2 of cheese sauce.
- Place all of sliced frankfurters over sauce; repeat with potatoes and sauce.
