Scalloped Potatoes 'N' Franks Recipe

  1. Set aside one frankfurter for garnish.
  2. Cut remainder into thin slices.
  3. In a 2 qt saucepan heat butter; saute/fry onions till tender.
  4. Stir in flour, salt, pepper and paprika.
  5. Remove from heat; stir in lowfat milk gradually.
  6. Cook over medium heat, stirring constantly, till thickened.
  7. Cook 2 min more.
  8. Remove from heat; stir in cheese and parsley till cheese is melted.
  9. Layer one half of potatoes into a buttered casserole; pour on 1/2 of cheese sauce.
  10. Place all of sliced frankfurters over sauce; repeat with potatoes and sauce.
