Gluten-Free Apple-O Mini Muffins

  1. Combine dry ingredients in a large bowl, using a fork to break up lumps.
  2. Stir in Perky-Os.
  3. In a separate bowl, combine wet ingredients.
  4. Add dry mixture to wet, stirring until just moistened.
  5. Spoon batter into greased mini muffin cups.
  6. Decorate muffin tops with Perky-Os.
  7. Bake 15 minutes in a preheated 400* F oven, or until golden brown.
  8. Let cool on a wire rack before serving.
  9. Enjoy!
