Garlic Lovers Summer Veggies

  1. In a large skillet, over medium high, heat the olive oil.
  2. Add the slliced onions and dried red pepper flakes, saute 2 minutes stirring frequently -- add the minced garlic and continue to stir for 1 minute.
  3. Add the squash and zucchini.
  4. Stir to mix.
  5. Let cook about 3 minutes, stirring frequently.
  6. Add the basil, oregano, salt and pepper.
  7. Stir to incorparate.
  8. Add the corn kernels and chopped tomato.
  9. Stir to mix well.
  10. Let veggies cook until they reach your level of perferred doneness.
  11. Put in serving bowl or on individual plates.
  12. Garnish with bacon bits and grated cheese.
  13. Note: By cooking the red pepper flakes at the beginning with the onions, their flavor will be infused throughout the dish.
