Southern Bacon Scramble Recipe
- 4 slices bacon
- 2 tbsp. onion, minced
- 1 can (14 1/2 ounce.) hominy, liquid removed
- 4 Large eggs
- Salt
- Pepper
- Fry bacon till crisp.
- Remove from pan and crumble.
- Keep 2 Tbsp.
- drippings in skillet.
- Fry onion till transparent.
- Add in well liquid removed hominy.
- Lightly beat together 4 Large eggs and seasoning.
- Then pour over hominy mix stirring to scramble Large eggs.
- When scrambled, pour in serving dish and top with crumbled bacon.
- Serves four.
