Southern Bacon Scramble Recipe

• 4 slices bacon
• 2 tbsp. onion, minced
• 1 can (14 1/2 ounce.) hominy, liquid removed
• 4 Large eggs
• Salt
• Pepper

1. Fry bacon till crisp.
2. Remove from pan and crumble.
3. Keep 2 Tbsp.
4. drippings in skillet.
5. Fry onion till transparent.
6. Add in well liquid removed hominy.
7. Lightly beat together 4 Large eggs and seasoning.
8. Then pour over hominy mix stirring to scramble Large eggs.
9. When scrambled, pour in serving dish and top with crumbled bacon.
10. Serves four.
