Smoky Gnocchi Mac n Cheese

  2. Preheat oven to 375 degrees.
  3. Prepare gnocchi according to package directions.
  4. Place in a single layer in a baking dish sprayed with nonstick spray.

  6. Melt butter over medium heat in a saucepan.
  7. Whisk in flour until it thickens and bubbles, then whisk in milk and dijon.
  8. Stir until thickened, 3-5 minutes.

  10. Add handfuls of the gouda and cheddar cheese to the milk mixture.
  11. Stir until all cheese melts and add salt, pepper, and crumbled bacon.

  13. Pour cheese sauce over gnocchi and sprinkle with the parmesan.
  14. Bake 25 minutes until puffed and golden.
  15. Top with fried sage leaves (heat a skillet over medium high heat, add a dab of butter and sage, saute until crisp).
