Smoky Gnocchi Mac n Cheese
- 1 pound Store-bought (or Homemade) Gnocchi
- 2 Tablespoons Butter
- 1 Tablespoon Flour
- 3/4 cups Milk
- 1 teaspoon Dijon Mustard
- 1/4 cups Smoked Gouda, Grated
- 1/4 cups Cheddar Cheese, Grated
- 2 strips Bacon, Cooked And Crumbled
- 1/4 cups Parmesan, Grated
- 1 sprig Fresh Sage, Fried
- Salt And Pepper

- Preheat oven to 375 degrees.
- Prepare gnocchi according to package directions.
- Place in a single layer in a baking dish sprayed with nonstick spray.

- Melt butter over medium heat in a saucepan.
- Whisk in flour until it thickens and bubbles, then whisk in milk and dijon.
- Stir until thickened, 3-5 minutes.

- Add handfuls of the gouda and cheddar cheese to the milk mixture.
- Stir until all cheese melts and add salt, pepper, and crumbled bacon.

- Pour cheese sauce over gnocchi and sprinkle with the parmesan.
- Bake 25 minutes until puffed and golden.
- Top with fried sage leaves (heat a skillet over medium high heat, add a dab of butter and sage, saute until crisp).
