Whole Grain Bread Recipe

  1. NOTE: Wheat germ and bran may be omitted.
  2. Just increase the amount of unbleached flour.
  3. Combine all ingredients, except the unbleached flour.
  4. Fold in sturdy mixer.
  5. Add in sufficient unbleached flour to allow high speed mixing, but not sufficient to make a stiff dough.
  6. Beat for 2-4 min at high speed.
  7. Using a dough hook, beat in the remainder of the flour to make a stiff dough.
  8. (If you do not have a dough hook, knead in sufficient flour to make a stiff dough).
  9. Continue kneading for 8-10 min.
  10. Let rise in a hot place till double (2-4 hrs).
  11. Separate the dough into 2 parts.
  12. Roll each (on a floured surface) into a rectangle.
  13. Roll up like a jelly roll.
  14. Place in a greased glass bread pan.
  15. Let rise for 1 hour.
  16. Put in a preheated oven (400 degrees) for 30 min.
  17. Remove from pan immediately.
