Chicken Coq Au Vin Recipe

  1. Cut up the chicken into serving portions, the smaller the better.
  2. Slice onion and simmer in butter in a large skillet till the onion is tender (it will take 5-6 min).
  3. Add in the cut up chicken, salt, chervil, onion pwdr and cover, simmer for 15 min, turning the chicken to prevent sticking, keep it on a medium-low heat.
  4. Add in washed mushrooms, cook another 15 min.
  5. Mix flour with a few spoonfuls of chicken broth till smooth.
  6. Add in the rest of the broth, the wine.
  7. Pour this mix onto the chicken cover and simmer for another 15-20 min.
  8. Serves 6-8.
