Blue Cheese Stuffed Portabella Mushrooms

  1. Preheat oven to 350 degrees.
  2. In a small bowl, combine chopped onion, yogurt, and blue cheese.
  3. Stuff mushroom caps with cheese mixture and season with salt and pepper.
  4. Bake for 10 minutes and then broil on high for about 5 minutes or until cheese begins to brown.
