Blue Cheese Stuffed Portabella Mushrooms
- 2 whole Portabella Mushrooms, Stems And Gills Removed
- 2 whole Spring Onion, Chopped
- 1/4 cups Plain Yogurt
- 1/4 cups Blue Cheese, Crumbled
- 1/2 teaspoons Kosher Salt
- 18 teaspoons Fresh Ground Pepper
- Preheat oven to 350 degrees.
- In a small bowl, combine chopped onion, yogurt, and blue cheese.
- Stuff mushroom caps with cheese mixture and season with salt and pepper.
- Bake for 10 minutes and then broil on high for about 5 minutes or until cheese begins to brown.
