Spinach Lasagna Roll - Ups
- 12 lasagna noodles
- 2 eggs- lightly beaten
- 2 1/2 cup ricotta cheese
- 2 1/2 cup shredded mozzarella cheese (10 oz)
- 1/2 cup grated parmesan cheese
- 1 pk. (10 oz ) frozen chopped spinach , thawed and squezzed dry
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/4 tsp ground nutmeg
- 1 jar 26 oz. meatless spaghetti sause
- Preheat oven to 375 .
- Cook lasagna noodles according to box.
- Meanwhile in a large bowl.
- Combine the eggs , cheeses, spinach, salt , pepper.and nutmeg.
- Drain noodles.
- Spread 1/3 cup cheese mixture over noodles.
- Carefully roll up.
- Pour 1 cup spaghetti sause into ungreased.
- 13 x 9 x 2" baking pan Place roll ups seam side down
- Top with remaining sause.
- I added cheese in top.
- Bake uncovered, at 375 .
- For 20-25 min.
- Or until heated through.
