White Pineapple Cupcakes
- 1 1/2 cup A.p flour
- 1 1/2 tsp Baking pwdr
- 1/4 tsp Salt
- 2 large Eggs
- 2/3 cup Sugar
- 3/4 cup Unsalted Butter melted
- 2 tsp Vanilla extract
- 1/2 cup Milk
- 10 oz Crushed pineapple
- Preheat oven to 350
- Whisk flour, bk.
- Pwdr, salt together.
- In another bowl best eggs and sugar until light and fluffy (bout 2 min)..
- While beating, add butter and vanilla.
- While mixing slowly, add half of dry ingredients, then all the milk, followed by the rest of dry ingredients.
- Add (drained-save juice) crushed pineapple and stir in.
- take care not to over mix.
- Fill cupcake pan with liners or pan spray.
- Fill 1/2 -3/4 of the way full.
- Bake at 350 for 20-25 mins untill tooth pick comes out clean.
- Look for pineapple buttercream frosting!
