Thin Rice Noodles/Idiappam/ Rice Sticks

  1. Soak the rice sticks in a large bowl of water that covers them completely for 23 hours.
  2. Shortly before eating, drain them and put them back in the bowl.
  3. With a pair of kitchen scissors, snip the noodles into manageable lengths.
  4. Pour boiling water over them.
  5. Leave for a minute and drain.
