Mid-Week Steak and Vegetables
- 500g baby chat potatoes, halved Safeway 2 pkg For $5.00 thru 02/09
- 500g pumpkin, cut into wedges
- olive oil spray
- salt and pepper, to taste
- 1 tablespoon chopped chives, optional
- 4 x 150g beef steaks (e.g. porterhouse, scotch, rump)
- 250g cauliflower florets Safeway 1 lb For $1.99 thru 02/09
- 5 yellow squash, cut into quarters
- 1 bunch asparagus, trimmed
- 1/3 cup KRAFT Cheese Vegie Pourover
- Place potatoes and pumpkin on a lined baking tray.
- Spray with oil and season.
- Bake at 200C for 30 minutes, or until tender and golden.
- Sprinkle with chopped chives.
- Heat a grill pan or BBQ over medium-high heat.
- Spray beef with oil and cook for 2-3 minutes each side or to your liking.
- Remove and wrap in foil to rest for 5 minutes.
- Boil or steam the cauliflower, asparagus and squash until tender; drain.
- Serve alongside baked vegetables and steak.
- Drizzle with Vegie Pourover and serve immediately.
