Mid-Week Steak and Vegetables

  1. Place potatoes and pumpkin on a lined baking tray.
  2. Spray with oil and season.
  3. Bake at 200C for 30 minutes, or until tender and golden.
  4. Sprinkle with chopped chives.
  5. Heat a grill pan or BBQ over medium-high heat.
  6. Spray beef with oil and cook for 2-3 minutes each side or to your liking.
  7. Remove and wrap in foil to rest for 5 minutes.
  8. Boil or steam the cauliflower, asparagus and squash until tender; drain.
  9. Serve alongside baked vegetables and steak.
  10. Drizzle with Vegie Pourover and serve immediately.
