Morning Glory Muffins
- 2 c. flour
- 1 1/4 c. sugar
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 2 c. carrots, grated
- 1/2 c. raisins
- 1/2 c. walnuts or pecans, chopped
- 1/2 c. coconut
- 1 apple, peeled and chopped
- 3 eggs
- 1 c. vegetable oil
- 1 tsp. vanilla
- Sift together flour, sugar and baking powder.
- Add salt and cinnamon.
- Stir in carrots, raisins, nuts, coconut and apples.
- In other bowl, whisk eggs, oil and vanilla.
- Add to flour mixture and stir just until combined.
- Spoon into well-greased and floured muffin tins, filling to top.
- Bake at 350u0b0 for 30 to 35 minutes or until done.
- Let cool in tins for 5 minutes, then put on rack to cool.
- Makes 30.
