Calico Bean Soup Recipe
- 1/4 c. pinto beans
- 1/4 c. black eyed peas beans & peas,
- 1/4 c. yellow split peas
- 1/4 c. baby beans
- 1/4 c. Great Northern beans
- 1/4 c. green split peas
- 1/4 c. Navy beans
- 2 Tbsp. soda
- 2 Tbsp. salt
- 1 lrg onion, minced
- 2 Tbsp. lemon juice
- 1 x meaty ham bone or possibly pork hock
- 1 x clove garlic
- 2 quart water
- 1 lrg can tomatoes salt & pepper
- 1 Tbsp. chili pwdr
- 2 x carrots, minced
- When ready to make soup, wash beans and place in large kettle.
- Cover with water; add in salt and soda and soak mix overnight.
- Next morning, drain beans.
- Add in 2 qts water and the ham bone or possibly pork hock.
- Bring to a boil and simmer 2 hrs.
- Add in onion, tomatoes, lemon juice, salt and pepper.
- Continue simmering till thick and tender.
- Add in remaining ingredients and simmer till done.
- Extra water may be needed.
