Low Fat Corn Chowder
- 2 tablespoons celery chopped
- 2 tablespoons onions chopped
- 2 tablespoons green bell peppers chopped
- 10 ounces corn kernels, canned frozen, whole
- 1 cup potatoes peeled, diced
- 2 tablespoons parsley leaves chopped
- 1 cup water
- 1/4 teaspoon salt
- 18 teaspoon black pepper
- 1/4 teaspoon paprika
- 2 tablespoons flour, all-purpose
- 2 cups evaporated milk skim
- 2 cups milk low-fat
- Put celery, onion, and green pepper in a pan sprayed with Pam and saute for 2 minutes.
- Add corn, potatoes, water, salt, pepper and paprika.
- Bring to a boil, reduce heat to medium; and cook, covered, about 10 minutes or until potatoes are tender.
- Add other ingredients and simmer.
