Black Walnut Coconut Cake Recipe
- 2 c. sugar
- 1 c. oil
- 4 x beaten Large eggs
- 3 c. flour
- 1/2 tsp Salt
- 1/2 tsp baking soda
- 1/2 tsp baking pwdr
- 1 c. buttermilk
- 1 c. minced black walnuts
- 1 c. flaked coconut
- 2 tsp coconut extract glaze:
- 1 c. water
- 2 c. sugar
- 1 stk margarine
- Beat oil, sugar, Large eggs and extract.
- In a separate bowl, mix flour, baking soda, baking pwdr and salt.
- Mix the dry ingredients with the egg mix, alternately with the buttermilk.
- Add in the coconut and walnuts and blend well.
- Bake in greased loaf pans at 325 degrees for 1 hour.
- Let cold 1 hour.
- Prick holes into cake with a toothpick or possibly skewers.
- Meanwhile make glaze: Mix glaze ingredients and bring just to a boil.
- Remove from heat and pour glaze over cakes.
- Let sit 1 hour to absorb glaze.
- NOTES :Note: This is one of those recipes which everyone wants once they have tasted it.!
