Fiesta! Breakfast Muffins
- 1 dozen Large grade A eggs
- 1 lb Ground Beef
- 1 medium Onion
- 1 medium Green Pepper
- 1/2 cup Milk
- 1 Salt and Pepper to taste
- 2 tbsp Taco Seasoning (Optional)
- 1 1/2 cup Shredded Cheese (Mexican)
- 1 Favorite Salsa (optional)
- Brown ground beef in medium skillet; drain.
- Preheat Oven to 350F (F)
- Dice the onion
- Dice the gutted and cleaned green pepper
- In Large mixing bowl, crack the 12 eggs into.
- No shell floaties please!
- Now add the milk, salt, pepper, and taco seasoning.
- (Throw in a pinch of oregano & garlic powder for an extra kick)
- Beat this mixture until well blended.
- Now add the cheese, green pepper, onion, and (now cooled) ground beef.
- Lightly grease or spray a muffin tin, and pour mixture in each cup about 3/4th the way full.
- Place them in the oven and bake for about 20 minutes, or until a light golden brown on top.
- Remove from oven and let cool.
- Serve with salsa and sour cream, or pop em in some storage containers and take with you for an on the go breakfast.
- Basically your making a mixture for an omlet and baking it.
- Try different things in it like ham or breakfast sausage.
- Plus these are a healthier alternative than grabbing that breakfast burrito from McDonals ;) Enjoy!
