Fiesta! Breakfast Muffins

  1. Brown ground beef in medium skillet; drain.
  2. Preheat Oven to 350F (F)
  3. Dice the onion
  4. Dice the gutted and cleaned green pepper
  5. In Large mixing bowl, crack the 12 eggs into.
  6. No shell floaties please!
  7. Now add the milk, salt, pepper, and taco seasoning.
  8. (Throw in a pinch of oregano & garlic powder for an extra kick)
  9. Beat this mixture until well blended.
  10. Now add the cheese, green pepper, onion, and (now cooled) ground beef.
  11. Lightly grease or spray a muffin tin, and pour mixture in each cup about 3/4th the way full.
  12. Place them in the oven and bake for about 20 minutes, or until a light golden brown on top.
  13. Remove from oven and let cool.
  14. Serve with salsa and sour cream, or pop em in some storage containers and take with you for an on the go breakfast.
  15. Basically your making a mixture for an omlet and baking it.
  16. Try different things in it like ham or breakfast sausage.
  17. Plus these are a healthier alternative than grabbing that breakfast burrito from McDonals ;) Enjoy!
