Mushroom Melange Pizza

  1. To prepare the marinade for the mushrooms, mix 1 oz.
  2. olive oil, lemon juice, rosemary, thyme, garlic, salt and pepper, and refrigerate until needed.
  3. To grill the mushrooms, toss with remaining oil, salt and pepper and grill.
  4. Combine with the reserved marinade while mushrooms are still warm.
  5. Reserve for assemble of pizza.
  6. To assemble each pizza, dust surface with cornmeal and roll 16 oz.
  7. dough into 12" diameter.
  8. Layer with 8 oz.
  9. mozzarella, the mixed mushrooms and 2 oz.
  10. Parmesan cheese.
  11. Bake at 500F for 7-8 minutes until golden brown.
  12. Cut each pizza into 8 slices.
  13. Yield: 12 Servings.
