Sesame Noodle Soup With Vegetables
- 1/2 cup sliced green onion
- 4 garlic cloves, minced
- 1 tablespoon sesame oil
- 2 1/2 cups thinly sliced napa cabbage
- 1 cup chopped red bell pepper
- 1 cup julienned carrot
- 1 cup sliced cremini mushrooms or 1 cup shiitake mushroom
- 3 (14 ounce) cans vegetable broth
- 12 ounces fresh Chinese noodles
- salt and pepper
- Saute green onions and garlic in sesame oil until tender, about 5 minutes.
- Add cabbage, bell pepper, carrots and mushrooms and saute until vegetables are crisp-tender, about 5 minutes.
- Add vegetable broth to saucepan; heat to boiling.
- Stir in noodles; return to boiling.
- Reduce heat and simmer, uncovered, until noodles are just tender, 1-2 minutes. Season to taste with salt and pepper.
