Healthier Sweet & Sour Sauce
- 12 cup ketchup
- 1 teaspoon soy sauce
- 13 cup white vinegar
- 1 (16 ounce) can unsweetened pineapple juice (Pineapple chunks reserved)
- 1 12 cups palm sugar or 1 12 cups white sugar
- 2 tablespoons cornstarch
- In a large saucepan over medium heat, combine the ketchup, soy sauce, vinegar, and palm sugar.
- Whisk together until smooth, and bring to a boil for 2 minutes.
- Pour the juice from the canned pineapple into a measuring cup, and top with water to reach 3/4 of a cup of liquid.
- Mix the cornstarch into the pineapple juice and water, blending until smooth.
- Whisk the cornstarch mixture into the saucepan to thicken, and simmer, stirring frequently, until the mixture thickens and no longer tastes chalky from the addition of the starch.
- Add the chunks of pineapple to the sauce if desired.
- Serve over Sweet & Sour breaded chicken or pork, or with meatballs.
