Healthier Sweet & Sour Sauce

  1. In a large saucepan over medium heat, combine the ketchup, soy sauce, vinegar, and palm sugar.
  2. Whisk together until smooth, and bring to a boil for 2 minutes.
  3. Pour the juice from the canned pineapple into a measuring cup, and top with water to reach 3/4 of a cup of liquid.
  4. Mix the cornstarch into the pineapple juice and water, blending until smooth.
  5. Whisk the cornstarch mixture into the saucepan to thicken, and simmer, stirring frequently, until the mixture thickens and no longer tastes chalky from the addition of the starch.
  6. Add the chunks of pineapple to the sauce if desired.
  7. Serve over Sweet & Sour breaded chicken or pork, or with meatballs.
