Extravagant Caprese, Shrimp, and Avocado Sandwich
- 6 slice Sliced sandwich bread
- 100 grams Peeled shrimp (small ones are fine)
- 1 dash of each Salt and pepper
- 2 tsp White wine
- 1 pinch Sugar
- 1 tbsp Tomato ketchup
- 1 tbsp Mayonnaise
- 1/4 tsp Lemon juice
- 1 dash Black pepper
- 50 grams Mozzarella cheese
- 1/2 Avocado
- 1 dash Lemon juice
- 2 to 4 thin slices Tomato (small)
- 1 dash Black pepper
- 1 Mayonnaise
- 1 Pesto
- 1 Butter
- Prep the shrimp: If using frozen shrimp, defrost and pat dry.
- Sprinkle with salt and pepper.
- Combine the ingredients together.
- Melt butter in a frying pan.
- Saute the shrimp quickly, add white wine and let the liquid evaporate.
- Add ingredients and mix.
- Take the shrimp out of the pan and cool.
- Slice the avocado and coat with the lemon.
- De-seed the tomato slices.
- Slice the mozzarella cheese thinly too.
- Use 3 slices of bread per person.
- Spread one of the slices both sides with butter, and spread the other two slices on one side with mayonnaise and pesto.
- Place one of the mayonnaise-pesto slices down and top with half the mozzarella cheese and tomato.
- Sprinkle black pepper.
- Top with the buttered bread.
- Cover with half a portion of shrimp, and layer the avocado slices.
- Put the other slice of mayonnaise-pesto on top with the spread side down.
- Make another sandwich the same way.
- Cut into half, and enjoy.
