Mixed Bean Salad
- 14 ounces green beans, cut
- 14 ounces yellow beans, cut
- 19 ounces red kidney beans
- 19 ounces chickpeas
- 1 cup celery, chopped
- 12 cup red onion, chopped
- 12 cup green pepper, chopped
- 14 cup sugar
- 23 cup white wine vinegar
- 13 cup olive oil
- 1 teaspoon salt
- 1 teaspoon ground pepper
- 1 teaspoon dried dill weed
- Drain beans and rinse with cold water.
- Combine in a large bowl and add celery, onion, and green pepper.
- Combine all dressing ingredients and whisk well.
- Pour over vegetables, mix well, taste and adjust seasonings, if necessary.
- Refrigerate before servings.
- Will keep several days in the refrigerator.
