Christmas Stollen
- 1 pkg. dry yeast
- 3/4 c. warm water
- 1/2 c. sugar
- 1/2 tsp. salt
- 1/2 c. softened unsalted butter (or margarine)
- 3 eggs
- 1 egg yolk
- 3 1/2 c. flour
- 1/2 c. chopped almonds
- 1/4 c. chopped citron
- 1/4 c. chopped candied cherries
- 1/4 c. light raisins
- 1 Tbsp. grated lemon peel
- Dissolve yeast in 3/4 cup of warm water.
- Add sugar, salt, butter, eggs and yolk, and 1 3/4 cups of flour.
- Beat 10 minutes at medium speed of electric mixer or by hand.
- Scrape bowl frequently.
- Stir in other 1 3/4 cups flour, and rest of ingredients.
- Cover, let rise in warm place until doubled, about 1 1/2 hours.
- Beat 25 strokes.
- Cover tightly with plastic wrap. Refrigerate overnight.
