Red Beans & Rice Again

  1. Soak beans overnight.
  2. Add salt pork to beans.
  3. Cover and simmer 45 minutes.
  4. Stir in next 10 ingredients.
  5. Cook one hour.
  6. Brown sausage and drain.
  7. Add to bean mixture.
  8. Cover and simmer 45 minutes, adding more water if needed.
  9. Serve over hot rice.
