Orange Frosted Cookies
- 2 cups (475 ml) sugar
- 1 cup (225 ml) shortening
- 2 eggs
- 1 cup (225 ml) sour cream
- 1 tsp (5 ml) vanilla
- 5 cups (1175 ml) flour
- 2 tsp (10 ml) baking powder
- 1 tsp (5 ml) baking soda
- 1 tsp (5 ml) salt
- 3/4 cup (175 ml) orange juice concentrate, thawed
- 2 tbsp (30 ml) fresh orange zest
- 1/2 tsp (2 ml) orange rind
- 2 tbsp (30 ml) orange juice concentrate, thawed
- 1 tsp (5 ml) vanilla
- 4 tbsp (60 ml) butter or margarine, melted
- 1-1/2 cups (350 ml) confectioners' sugar
- Cream sugar and shortening.
- Add eggs and stir.
- Stir in sour cream and 1 tsp (5 ml) vanilla.
- Sift together flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to the creamed mixture and stir well.
- Add 3/4 cup (175 ml) orange juice concentrate and 2 tbsp (30 ml) orange rind.
- Drop onto greased cookie sheets by tspfuls.
- Bake at 375 degrees (200 C.) F for about 10 minutes.
- Frost cookies when they are cool.
- To make frosting, mix the remaining ingredients together.
